Ugwu Leaves
Ugwu Leaves (fluted pumpkin leaves) are a popular Nigerian leafy vegetable used in soups, stews, and sauces for a fresh, hearty taste. The plant is known as Telfairia occidentalis and is widely eaten across West Africa as a cooked green that pairs well with fish, meat, and bold seasonings.
For best results, rinse, chop, and add near the end of cooking to keep a nice color and texture. To store, keep them refrigerated and protected from excess moisture (for example, wrapped and kept in a breathable/perforated bag) and use within a few days for the best quality.
